Abstract

Bacteria are essential to the food industry because they help with several processes, including production, fermentation, preservation, flavoring, and nutritional improvement. While certain bacteria are dangerous and can lead to illnesses or food spoiling, many helpful bacteria have favorable biological and biochemical features and are therefore extensively used in industrial food preparation. This study takes a look at the ways bacteria are useful in the food industry and how they contribute to food safety, productivity, and people's health. bacteria's function in the fermentation processes that provide foods and drinks like curd, yogurt, cheese, pickles, vinegar, bread, and fermented drinks. The significance of lactic acid bacteria, such as Streptococcus and Lactobacillus species, in enhancing the nutritional content, texture, flavor, and shelf life of food is highlighted. In addition to discussing probiotic foods, enzymes, food preservation, and biotechnology-based food processing, the article delves into the various uses of bacteria in these areas.
